Tomato & Basil Salad + Maple Pumpkin Cottage Cheese

155 g Roma tomatoes - 2.5 tomatos
Basil - 2.5 tbsp
Onions - 1/2 cup, chopped
1/2 cup Mozzarella cheese, Part Skim Milk
Balsamic vinegar - 2 tsp
Olive oil - 2 tbsp
Pepper - 1 tsp
Salt - to taste
Pumpkin - 4 tbsp
Pumpkin pie spice - 1/2 tsp
Sugar Free Maple syrup - 1 tsp
Low fat Cottage cheese - 1/2 cup
Wash and dice tomatoes. Chop fresh basil. Peel and dice onion.
Combine vinegar, oil, basil and toss to taste in a large bowl. Add tomatoes, onion, cheese and toss to coat.
You can serve right away or you can let sit for about an hour in the fridge to marinate the flavors.
Mix all remaining ingredients together for the maple pumpkin cottage cheese and enjoy!
