Maple Glazed Salmon + Mixed Greens with Sliced Cucumber and Avocado

Ingredients

Maple syrup - 1/2 tbsp

Hoisin sauce - 1/2 tbsp

Dijon mustard - 1/2 tsp

Pepper - 1/8 tsp

Atlantic salmon - 6 oz

1/2 tsp Olive oil



Greens Salad Mix - 8 oz

Cucumber - 1 cup, chopped

Avocados - 1 fruit

Reduced fat Italian dressing - 2 tbsp

Salt - to taste

Pepper - 1 tsp

Directions

  1. Preheat broiler.

  2. Combine first 4 ingredients in a small bowl; stir with a whisk.

  3. Place salmon, skin side down, on a broiler pan coated with oil. Brush with maple mixture. Broil 10 to 12 minutes or until fish flakes easily when tested with a fork, brushing with maple mixture after 5 minutes and again after 10 minutes.


  1. Combine salad greens, cucumber, and avocado.

  2. Toss with low-carb salad dressing of your choice and season to taste with salt and freshly ground black pepper.
